A low carb steak taco bowl that will satisfy your Mexican food cravings in under 30 minutes. Serve as is or in low carb tortillas or lettuce leaves for a satisfying one pot meal!

 Low Carb Steak Taco Bowl uses leftover meat and veggies you probably already have on hand. Cook this recipe in a large skillet for a one pot meal!   This steak taco recipe is super flexible as you can use any leftover beef or steak. You can also use ground beef here, but I find the steak strips make for a heartier, more satisfying meal.

The main ingredients:

  • Mushrooms- I use portobello- use your favorite type
  • Peppers- poblanos or bell peppers may be used
  • Steak- choose your preferred type of steak- anything from filet to sirloin to round steak will work
  • Taco Seasoning mix- this helps add the authentic Mexican flavor. I use a lower sodium variety.
  • Queso- melting cheese makes a delicious topping to this steak bowl. If you don't have quest, sprinkle on whatever cheese you like.

How to make low carb steak taco bowl:

  1. Add veggies to skillet and sauce.
  2. Saute until tender and cooked.
  3. Meanwhile add taco seasoning to steak.
  4. Saute steak until brown and fully cooked.
  5. Add veggies back to skillet then drizzle cheese over all.

  • Have all ingredients sliced and ready to go as this recipe goes quickly once started.
  • Slice steak thinly to speed up cooking time.

Ingredients

  • 1 tablespoon olive oil divided
  • 1 teaspoon minced garlic
  • ½ small onion, sliced thinly or 5-6 green onions
  • 8 small portobello mushrooms, sliced
  • 1 small poblano pepper may use bell pepper
  • salt and pepper
  • 10 oz steak, sliced thinly
  • 1 tablespoon taco seasoning mix
  • ¼ cup queso melting cheese

Instructions

  • Heat 1-2 teaspoons olive oil in a medium skillet and add garlic, onions, mushrooms and peppers.  Cook until tender, about 10 minutes. Sprinkle with salt and pepper, as desired. Remove from skillet.
  • Add taco mix to sliced steak.  Add 1 teaspoon olive oil to skillet and heat over medium.  Add steak and stir fry until brown and cooked- about 1-2 minutes depending on thickness of slices.
  • Add cooked veggies back to skillet with steak and stir.  
  • Heat queso and pour over steak mixture.

    Hi! What exactly is queso melting cheese? Is there a particular brand you use? Thank you!

      This is the white cheese served with chips in Mexican restaurants. It is usually found on the chip aisle or in the cooler with other cheeses. Also velveeta makes a queso melting cheese that will work. Hope that helps!
