Crunchy Thyme and Mustard Pork Tenderloin

- 1 pound pork tenderloin
- 1-2 tablespoons brown mustard (or your favorite type)
- ½ teaspoon crushed thyme
- ½ cup to 1 cup panko bread crumbs
- salt and pepper to taste
- 1-2 tablespoons olive oil
Slice pork into ¼ to ½ inch slices.
Spread a small amount of mustard on each pork slice.
Salt and pepper each slice and sprinkle evenly with crushed thyme.
Turn pork slices over and repeat seasoning process.
Place panko crumbs in a bowl and firmly press each slice into crumbs to coat.
Heat olive oil in a saute pan over medium heat and add pork slices.
Cook until browned then turn slices to brown evenly (approx.5 minutes per side).
Cover pan and lower heat to steam pork (approx. 10 minutes depending on thickness of pork until thermometer registers 145 degrees). Serve.
