Crunchy Thyme and Mustard Pork Tenderloin

Ingredients

  • 1 pound pork tenderloin
  • 1-2 tablespoons brown mustard (or your favorite type)
  • ½ teaspoon crushed thyme
  • ½ cup to 1 cup panko bread crumbs
  • salt and pepper to taste
  • 1-2 tablespoons olive oil

Instructions

  • Slice pork into ¼ to ½ inch slices.
  • Spread a small amount of mustard on each pork slice.
  • Salt and pepper each slice and sprinkle evenly with crushed thyme.
  • Turn pork slices over and repeat seasoning process.
  • Place panko crumbs in a bowl and firmly press each slice into crumbs to coat.
  • Heat olive oil in a saute pan over medium heat and add pork slices.
  • Cook until browned then turn slices to brown evenly (approx.5 minutes per side).
  • Cover pan and lower heat to steam pork (approx. 10 minutes depending on thickness of pork until thermometer registers 145 degrees). Serve.
