Make this 10 minute avocado pizza for a satisfying lunch or snack! Use low carb tortillas and swiss cheese spread to create an awesome diabetes friendly pizza.
1wedge Laughing Cow cheeseswiss (or your favorite)
4-5cherry tomatoessliced
½avocadosliced
2tablespoongrated parmesan cheeseoptional
Instructions
Place tortilla on a baking sheet and broil until crispy-this takes only a few minutes! Flip tortilla over and broil other side until crispy. (Watch tortilla carefully to prevent overcooking.)
Spread laughing cow cheese evenly over tortilla, then add tomatoes and avocado slices.
Sprinkle cheese over all and place under broiler just until cheese melts.
Slice into wedges and serve.
