1 15oz.can kidney beansor your favorite bean, rinsed
⅔cuplower sodium chicken broth
¾cupmild rotel
1 14.5oz.can diced tomatoesincluding liquid
salt and pepperas desired
sour creamoptional
grated cheeseoptional
Instructions
Heat oil in a medium sized soup pot, then add beef, onion, garlic, carrot, celery, and bell pepper. Cook and stir over medium heat until beef is browned.
Add all remaining ingredients and stir.
Adjust seasonings as desired.
Simmer over low heat about 30 minutes.
Serve with sour cream and grated cheese if desired.
