Add remaining ingredients to skillet. Stir then cover and drop the heat to medium low. Allow to cook 12-15 minutes until sweet potatoes are tender and sausage reaches 165℉ .
Adjust seasoning and serve warm.

Hint: For a real time-saving option, use pre cut sweet potatoes and frozen diced peppers and onions! Jazz it up with a garnish of chopped green onions or chives.
