 I am a Registered Dietitian and a Certified Diabetes Care and Education Specialist. I offer easy tips to incorporate good health habits into your daily routine and to make life easier if you have diabetes. 

Why did I create Easyhealth Living?

Flashback to 2013. One day I came home from work and asked myself the question all clinical dietitians ask themselves. Why does everyone want me to make them menus for their diet instead of learning how to do it themselves?? (Meal planning is a foundation of diet education.) This was an ongoing question I had for YEARS. I decided to write some meal planning ebooks which are all on amazon. I also sell one of these on this blog. These books are meant to assist those who want family friendly menus that will enable them to follow their prescribed low calorie or lower carb diet.

The great response to the menu ebooks led me to start Easyhealth Living blog as a way to show that diabetes friendly food CAN taste good. The key is moderation in carb intake and focusing on an overall healthy food intake.

I love to create tasty low carb recipes and meal plans/ideas. I also love to showcase FREEBIES on my resource page whenever I find them.

Looking for reliable diabetes information close to home?

Contact your local hospital to find a Certified Diabetes Care and Education Specialist or a Registered Dietitian in addition to regular appointments with your personal physician/ health care provider. These professionals can work with you to personalize your diet and treatment plan for the best chance of success. 

Fun Facts About Charlotte ↓

  1. My favorite foods are shrimp and pizza (that's why there are so many pizza recipes on my blog!)
  2. In my spare time, I love to grow herbs. My favorites are thyme, oregano and tarragon.
  3. The first recipe I ever made on my own (other than helping my mom in the kitchen) was Baked Alaska(!) in middle school home economics class. After that success, I was hooked and have been cooking since.

      I am wondering if the $4.99 fee is weekly, monthly, or a one-time fee. I am looking forward to hearing from you. I just was diagnosed with Diabetes 2 and am 82 yrs old. I feel frustrated with how to put a meal together using food combinations.

        The $4.99 is a one time price for my ebook with menus and recipes. It is fully refundable if you don't find it helpful. Have you seen a Registered Dietitian for help with meal planning? If not, I am sure your doctor can refer you to one. Medicare usually covers diet education for type 2 diabetes. You will get lots of good, helpful info. Thank you for visiting EasyHealth!

    Is oatmeal bad or good for diabetics? Will rinsing help? It raises Mt blood sugar yet I see recommendations.

      Many people do well with oatmeal especially steel cut oats. One of the reasons blood glucose monitoring is so important is it can let you know foods to use/avoid based on your individual response. Certain foods that are generally recommended may not work well for everyone.

    Hi Charlotte
    I’ve been living as a Type II for about 20 years now when we really weren’t educated as much as just put on drugs. I know my biggest problem is insulin resistance and wondered if you might have some tile or tricks to jump start the reversal of that?

      I would recommend calling your local hospital and ask to speak with the Registered Dietitian on staff. Try to get an appointment to receive individualized diet education. This will help you determine your best course of action.
