    Here's a tasty Greek style marinated chicken recipe you can make on the weekend, then use all week long in wraps, salads, sandwiches and other easy meals. Spend more time at the pool or the ball game and less time cooking!

    This particular recipe is really a "base" recipe that you can build lots of meals on. For example, in the photo above, I am using the Greek chicken in a salad. I've also included other ways you can use this recipe such as Greek chicken pita wraps, chicken salad, etc.

    You can cook up a batch of this chicken and have a good variety of meals to enjoy for several days. If your life is busy and hectic at mealtime, this will make meal prep and cooking a breeze!

    • Most ingredients you probably already have in your pantry- just grab some balsamic vinegar if needed. (This will last a long time in your pantry and can be used in lots of other recipes.)
    Easy Greek Chicken

    🥘 Ingredients

    • Chicken breasts- you may use chicken tenders if desired.
    • Olive Oil
    • Balsamic Vinegar- be sure to include as it helps deepen the flavor.
    • Oregano, thyme, garlic- these seasonings will form the flavor profile.

    🔪 Instructions

    Step 1: Cut chicken breasts or tenders into thin strips and place in large reclosable baggie.

    Step 2: Add seasonings to bag and combine.

    Step 3: Cook chicken in heavy skillet for a nice brown crust.

    💭 Top tips

    1. Allow chicken to marinate at least 30 minutes and up to 1 day in advance for best flavor.
    2. Use dried herbs and seasonings that are in date. Herbs with expired dates will be less flavorful.
    3. If available, a heavy iron skillet will easily produce a brown crunchy crust.

    Ingredients

    • 12 oz boneless chicken breasts or tenders
    • 1 Tablespoon olive oil
    • 1 Tablespoon balsamic vinegar
    • ½ teaspoon crushed dried oregano
    • ½ teaspoon thyme
    • ½ teaspoon minced garlic
    • ⅛ salt optional
    • dash black pepper optional
    • 1 teaspoon olive oil
    Prevent your screen from going dark

    Instructions

    • Slice chicken into thin pieces.
    • Combine all ingredients except 1 teaspoon oil in large reclosable plastic bag. Place bag in refrigerator and allow to marinate at least 30 minutes and up to 1 day.
    • Heat 1 teaspoon oil in skillet or pan and cook chicken until all sides are golden brown and internal temperature reads 165 degrees (approx. 7-10 minutes). (Discard marinade)
    • Store any leftovers in refrigerator or freezer.
