    If you love easy meals that taste great, give low carb chicken ricotta a try! Included in this recipe is a link to skillet chicken tenders and roasted cherry tomatoes. Cherry tomatoes are very easy to grow and this is a great recipe to use up any surplus tomatoes you may have.

    These two recipes combine with ricotta cheese mixture to create a delicious meal the whole family will love. This recipe is diabetes friendly and includes a side dish of spiralized squash mixed with spaghetti. The veggies help keep the carb count low while the pasta keeps it satisfying. Let's get started!

    The main ingredients

    • Chicken tenders- you will need about 1 pound. These will be prepared according to my recipe for Skillet Chicken Tenders.
    • Ricotta and parmesan cheese- choose low-fat if desired for calorie savings
    • Cherry tomatoes- these will be prepared according to my recipe Balsamic Roasted Cherry Tomatoes.

    How to make this recipe:

    • Step 1- Start by making a recipe of my low carb skillet chicken tenders. This can be done ahead of time if desired.
    • Step 2- Make a batch of balsamic roasted cherry tomatoes- these can be made ahead of time if desired. You may use sun-dried tomatoes if desired.
    • Step 3- Mix up cheese mixture and add a layer on top of chicken tenders. Keep the chicken in a skillet or oven proof pan to easily reheat. Top with tomatoes.
    • Step 4- Add spiralized veggies mixed with pasta. This will keep carb levels lower and help you stay full. If you prefer a stricter carb level, simply omit the pasta.

    Expert Tips:

    1. Use the same skillet to prepare the chicken tenders and assembling this recipe for less clean up.
    2. Prepare the individual ingredients for this recipe ahead of time for a super fast weeknight meal.
    3. Make sandwiches out of the leftovers using low carb buns or bread.

    Ingredients

    • 1 lb skillet chicken tenders click for recipe
    • 1 cup ricotta cheese
    • ½ cup parmesan cheese
    • 1 teaspoon oregano, crushed
    • 1 cup cherry tomatoes, roasted click for recipe
    • spiralized yellow squash, lightly sauteed optional
    • cooked spaghetti optional
    • olives, garnish optional

    Instructions

    • Prepare skillet chicken tenders.  Set aside.
    • Prepare roasted tomatoes (or may substitute sun dried tomatoes if desired.) Set aside.
    • In a small bowl, mix ricotta, parmesan and oregano.  Stir to combine.
    • Mix yellow squash spirals and spaghetti. Toss with olive oil and salt to taste.
    • To assemble:  Spread chicken tenders with ricotta cheese mixture and top with tomatoes.  Place under broiler to heat.  (Serve with squash mixture and garnish with olives if desired.)
