Cucumber Tomato Salad

 A delicious and colorful salad you will love year round. Sliced cucumbers, onions and tomatoes marinated in Italian dressing-so easy! Make it the night before for even more flavor- the perfect side salad.

Cucumber Tomato Salad

How about a low carb Greek cucumber salad you can make in less than 15 minutes? Not only is it quick, but also contains just 4 ingredients! Cucumbers are filled with both antioxidant and anti-inflammatory compounds, while red onions and tomatoes are high in polyphenols (disease prevention) and vitamins. Be sure to peel off as little of the outer layers of the onion as possible to help preserve it's natural disease fighting compounds.

This low carb recipe can be made year round but it really shines when you are able to use fresh summer veggies. I love to garnish this salad with fresh herbs from the garden or a few sprigs of parsley from the grocery. Cucumber tomato salad pairs well with our Greek Chicken Pita Wrap, Greek Chicken Tenders and Low Carb Mediterranean Chicken.

This recipe fits into the Mediterranean diet and is diabetes friendly. If you are watching your fat intake, look for lower fat Italian dressing. Also, feel free to add in extra herbs if desired.

Ingredients

  • Cucumbers-sliced thinly
  • Red onion-sliced thinly. I used a medium size onion.
  • Cherry Tomatoes-sliced in half, I used a pint box full.
  • Zesty Italian Dressing- you may use a lower carb or lower fat product if desired.

Instructions

  • Slice the cucumber

  • Halve the cherry tomatoes

  • Combine the veggies in a bowl

  • Add the dressing and stir.

Storage

Place the cucumber salad in the refrigerator and store it up to 3 days. I find the flavor is best the next day. If you are taking this salad to a picnic, place it in a cooler for transport. This helps keep the veggies crisp and delicious.

Top Tip

Be sure to use Italian dressing as it has the perfect blend of herbs and vinegar for this salad. If you are watching your carbs, be sure to check the label for the best option.

Ingredients

  • 1 medium cucumber sliced
  • 1 medium red onion sliced thinly
  • 1 pint cherry tomatoes halved
  • ⅓ cup Italian dressing
