    Greek Cucumber Salad

    Greek Cucumber Salad

    How about a low carb Greek cucumber salad you can make in less than 10 minutes? Not only is it quick, but also contains just  5 ingredients! Cucumbers are filled with both antioxidant and anti-inflammatory compounds, while red onions and tomatoes are high in polyphenols (disease prevention) and vitamins. Be sure to peel off as little of the outer layers of the onion as possible to help preserve it's natural disease fighting compounds.

    Ingredients

    • 1 medium cucumber sliced
    • ⅓ cup diced red onion
    • 1 cup chopped tomato
    • ½ teaspoon low sodium Greek seasoning
    • 1 Tablespoon lemon juice

    Instructions

    • Combine all ingredients in a medium size salad bowl and toss to combine.
    • Store in refrigerator.
