Question: do you cook the cauliflower or mushrooms before combining the ingredients?

Hi Sue, No you don't have to cook the veggies before combining. They will all cook together in the oven. Hope you enjoy! Charlotte

There are 2 different calorie amounts. Is it 118 or 214 calories per muffin?

Hi Judy, Each muffin is approximately 118cal. A serving is 2 muffins which is where the 214 cal amount comes in. Hope that helps!

Thank you for this base recipe. I enhanced it. I used liquid egg whites, spinach, onions and bell peppers. Seasoned with salt, pepper, roasted garlic and I added 2 tbsp of flax instead of 1. Cane out perfect!
