Is it possible to have a healthy breakfast bar that's also slightly decadent? YES!! My requirements for this recipe: easy (of course), healthy, oats, SUPER MOIST, bananas! The result was this amazingly delicious breakfast bar you will look forward to eating. If you like banana bread, you will love this recipe!!
This recipe was inspired by my quest for delicious breakfast ideas and ways to use up a giant box of oatmeal. I love to experiment with recipes using bananas since I always have plenty on hand. Most breakfast/snack bars are very high carb and low in fiber. This recipe could easily be added to your snack idea rotation or as a dessert after a light meal.

- Bananas
- Olive oil
- Honey
- Egg
- Vanilla
- Sour cream
- Peanut butter
- Oatmeal
- Whole wheat flour
- Flaxseed
- Salt, Baking Soda
- Butterscotch or chocolate chips, optional
🔪 Instructions
Start by mashing the bananas-then add all the wet ingredients to bowl. Stir or whisk well to combine.
Measure out the dry ingredients and whisk together to combine.
Add the dry ingredients to the banana mixture then stir or whisk to combine. Add in the butterscotch chips or chocolate morsels now if using.
Spread the mixture into an 8" baking pan then place in oven for about 20-30 minutes or until set in the middle. Cool pan on metal rack.
You may sprinkle oats over the bars as a garnish if desired. Then slice into 9 squares and serve.
Hint: As you begin your prep for this recipe, here's a quick clean-up tip: Take a square of parchment paper and fit it into your 8" or 9" pan. You can lift the bars out of the pan after they are done and easily place them on a cooling rack.
📖 Variations and Substitutions
- No sour cream? Use yogurt
- No honey? Use brown sugar or maple syrup
- Use another extract instead of vanilla- coconut, almond etc
- Substitute other nut butters for peanut butter
- Use regular all purpose flour instead of whole wheat flour
Storage
These bars may be stored in an air tight container and placed on counter for 1-2 days or in the refrigerator for 3-4 days.

Peanut Butter Banana Oatmeal Bars
Ingredients
- 2 medium ripe or over ripe bananas
- ¼ cup olive oil
- ¼ cup raw honey
- 1 large egg beaten
- 1 teaspoon vanilla
- ¼ cup sour cream
- 2 Tablespoons peanut butter
- 1 cup old fashioned oats
- ½ cup unbleached whole wheat flour
- 2 Tablespoons ground flaxseed
- ½ teaspoon sea salt
- ½ teaspoon baking soda
- ¼ cup butterscotch or chocolate chips optional
Instructions
- Preheat oven to 350 degrees F.
- Spray an 8" or 9" square baking pan with nonstick spray or fit pan with parchment paper.
- In a large mixing bowl, mash bananas. Stir or whisk in olive oil, honey, egg, vanilla, sour cream and peanut butter.
- In a separate medium- size mixing bowl, combine oats, flour, flaxseed, salt, baking soda. (Stir with a whisk to make sure all dry ingredients are well combined.)
- Add dry ingredients to banana mixture. Stir to combine.
- Stir in chips if desired.
- Spread mixture into prepared pan and bake 20-30 minutes or until middle is set.
- Place on rack and allow to cool then slice into 9 squares.
- Garnish with oatmeal flakes over top if desired.
