Low carb broccoli salad is the perfect side dish- loaded with healthy and delicious ingredients like broccoli (obviously), green onions and sunflower seeds. I wanted to make this recipe even easier! Instead of a homemade mayonnaise dressing, I went with coleslaw dressing which worked perfectly! All the ingredients are low carb so it’s a dish everyone can enjoy.
This recipe makes a great addition to your summer picnic menu or as a last minute dish to bring to any event. Low carb broccoli salad would be the perfect recipe to take to a friend or relative who follows a diet for diabetes. It keeps well in the refrigerator, so you can prep the day before.
Low Carb Broccoli Salad
- 3 cups broccoli, chopped
- 2 green onions, chopped cleaned and chopped
- 1/4 cup sunflower seeds
- 1/2 cup bacon, diced
- 1/2 cup coleslaw dressing
- 2 mini peppers, chopped
- Combine all ingredients and season with salt and pepper as desired.
