A low carb casserole that also delicious? Bring it on! Yes, this cheese and egg based casserole is perfect for any meal and would make a great dish to share with a friend or neighbor with diabetes. I served mine with hollandaise sauce for an even creamier texture and it was so good!

If you are not watching carbs, feel free to serve this on whole grain noodles, rice or toasted sourdough bread. This recipe can be easily doubled to serve a large crowd and can be prepared ahead of time up to the point of baking. Just keep it in the refrigerator for up to 24 hours then bake.

Why this recipe works

  • Uses leftover turkey or you may purchase deli turkey 1-2 thick slices and chop or dice.
  • Uses fresh or frozen broccoli.
  • Ready in about 30 minutes!
  • Garnish with hollandaise sauce for even more delicious flavor!

Main ingredients

  • Turkey: use up your leftover turkey, roast a turkey breast or purchase deli turkey .
  • Broccoli: fresh or frozen broccoli works great!
  • All purpose seasoning: I prefer Emeril's seasoning but use your favorite.
  • Cheese: I love sharp cheddar but any cheese will work.
  • Eggs: this recipe uses large eggs.

This recipe is the answer to leftover Thanksgiving turkey! If you don't have leftovers try turkey from the grocery deli. Ask for thicker slices and then cube them to add to the recipe. In addition, rotisserie chicken will work well in this recipe.

How to make

  • Step 1:  Start with chopped broccoli. Place in a microwave safe casserole dish to minimize extra pans to wash. Microwave until tender.
  • Step 2:  Sprinkle cubed or shredded turkey over the broccoli.
  • Step 3:  Sprinkle cheese over broccoli and turkey.
  • Step 4: Lightly whisk eggs and pour over ingredients then bake.

 Expert Tips:

  • This is a one dish meal-choose an microwave/oven safe baking dish.
  • Spray baking dish with non stick spray or oil to make cleanup easier.
  • Serve with hollandaise sauce if desired for even more flavor.

I love to serve this recipe with a side of hollandaise sauce for even more creamy goodness. I used a packet of hollandaise sauce mix from the market. It goes perfect with the broccoli and turkey.

Ingredients

  • 2 cups broccoli florets chop broccoli into small pieces
  • 2 cups chopped turkey about .75#
  • ¼ teaspoon all purpose seasoning Emeril's
  • 1 ½ cup cheddar cheese, grated
  • 5 eggs beaten slightly
  • 1 cup hollandaise sauce, prepared optional

Instructions

  • Preheat oven to 375 degrees F.
  • Place broccoli into medium size baking dish and cover with a paper towel. Microwave on high 2 minutes or until cooked slightly.
  • Add turkey to broccoli in baking dish and stir to combine then sprinkle with seasoning and cheese.
  • Pour the eggs over all and stir to combine.
  • Cook uncovered about 20 minutes or until eggs are set. Serve with hollandaise sauce if desired.

    I just have 1 question and hope you can answer it SOON!!
    I'd like to prep it now and bake it tonight when I get home. Should I assemble everything now and put it in the fridge? What's the best way to prep it ahead of time?
    I'd really appreciate if you can give me an answer soon so I have time to prep it before I go to work. Thanks!

      Hi Fatima,
      To prepare ahead I would complete through step 3. Place the dish in the refrigerator then when you’re ready, pour the eggs over and bake. Hope that helps!

    I made this recipe the other day with leftover turkey. My Family Loved it and wants it again ASAP. I Love that this recipe would also work great with chicken. I always have leftover rotisserie chicken. I might try to add some sliced potatoes to this recipe next time. Thanks for sharing this yummy recipe.
