A low carb casserole that also delicious? Bring it on! Yes, this cheese and egg based casserole is perfect for any meal and would make a great dish to share with a friend or neighbor with diabetes. I served mine with hollandaise sauce for an even creamier texture and it was so good!
If you are not watching carbs, feel free to serve this on whole grain noodles, rice or toasted sourdough bread. This recipe can be easily doubled to serve a large crowd and can be prepared ahead of time up to the point of baking. Just keep it in the refrigerator for up to 24 hours then bake.

This recipe is the answer to leftover Thanksgiving turkey! If you don't have leftovers try turkey from the grocery deli. Ask for thicker slices and then cube them to add to the recipe. In addition, rotisserie chicken will work well in this recipe.
How to make
- Step 1: Start with chopped broccoli. Place in a microwave safe casserole dish to minimize extra pans to wash. Microwave until tender.
- Step 2: Sprinkle cubed or shredded turkey over the broccoli.
- Step 3: Sprinkle cheese over broccoli and turkey.
- Step 4: Lightly whisk eggs and pour over ingredients then bake.
Expert Tips:
- This is a one dish meal-choose an microwave/oven safe baking dish.
- Spray baking dish with non stick spray or oil to make cleanup easier.
- Serve with hollandaise sauce if desired for even more flavor.

Broccoli Turkey Casserole
Ingredients
- 2 cups broccoli florets chop broccoli into small pieces
- 2 cups chopped turkey about .75#
- ¼ teaspoon all purpose seasoning Emeril's
- 1 ½ cup cheddar cheese, grated
- 5 eggs beaten slightly
- 1 cup hollandaise sauce, prepared optional
Instructions
- Preheat oven to 375 degrees F.
- Place broccoli into medium size baking dish and cover with a paper towel. Microwave on high 2 minutes or until cooked slightly.
- Add turkey to broccoli in baking dish and stir to combine then sprinkle with seasoning and cheese.
- Pour the eggs over all and stir to combine.
- Cook uncovered about 20 minutes or until eggs are set. Serve with hollandaise sauce if desired.

To prepare ahead I would complete through step 3. Place the dish in the refrigerator then when you’re ready, pour the eggs over and bake. Hope that helps!
