Hamburger vegetable soup is just that easy to make! The best comfort food the whole family will love and it gets better overnight in the refrigerator. Most all the ingredients are items that are usually on hand in the pantry or freezer. This soup is a great way to “clean out the refrigerator”! I used carrots, green beans, corn, pasta and canned tomatoes. If you are wanting a lower carb soup, just substitute lower carb veggies for the corn and pasta. Some lower carb veggies include celery, cabbage, peppers, etc.

Brown and crumble the ground beef in a soup pot. After it is brown, drain on paper towels and remove any fat from the soup pot. Return the ground beef to the pot.
Add the sliced beef broth, carrots, green beans, diced tomatoes and seasonings to the soup pot.
Next add corn and cooked pasta if desired. Allow to simmer about 30 minutes or until carrots are fully cooked. This soup may be served immediately, but like most soups, it is even better the next day after the seasonings have time to settle in.

- 1/2 lb ground beef
- 32 oz beef broth, lower sodium
- 14.5 oz canned tomatoes, diced
- 14.5 oz canned green beans
- 1 cup sliced carrots
- 3/4 cup corn
- 3/4 cup cooked pasta
- 1 tbsp Worcestershire sauce
- 2 tbsp ketchup
- 1 tsp thyme, crushed
- 1/2 tsp salt
In a medium size soup pot, brown ground beef over medium heat.
Add remaining ingredients.
Simmer 30 minutes. Adjust seasonings as needed.
