Hamburger Vegetable Soup

Hamburger vegetable soup is a family favorite meal.  Uses common pantry and freezer items and can be easily made low carb with a few tweaks.  Cook up a batch for a neighbor or friend who needs a comforting meal.

Hamburger vegetable soup is so easy to make! The best comfort food the whole family will love and it gets better overnight in the refrigerator. Most all the ingredients are items that are usually on hand in the pantry or freezer. This soup is a great way to "clean out the refrigerator"!

I used carrots, green beans, corn, pasta and canned tomatoes. If you are wanting a lower carb soup, just substitute lower carb veggies for the corn and pasta. Some lower carb veggies include celery, cabbage, peppers, etc. Check out our Ham Bone Soup for another delicious option!

If you are watching calories, be sure to use a lean ground beef such as ground round or even ground chuck. After you brown your meat,  pour off all the grease into a separate bowl to dispose of later.

Instructions

  1. Brown ground beef.
  2. Add beef broth, veggies and seasonings.
  3. Cook for 30 minutes then adjust seasonings and serve.

Brown and crumble the ground beef in a soup pot. After it is brown, drain on paper towels and remove any fat from the soup pot. Return the ground beef to the pot.

Add the beef broth, carrots, green beans, diced tomatoes and seasonings to the soup pot.

Next add corn and cooked pasta if desired. Allow to simmer about 30 minutes or until carrots are fully cooked. This soup may be served immediately, but like most soups, it is even better the next day after the seasonings have time to settle in.

Serve this soup with grilled cheese, peanut butter sandwiches, cornbread or crackers. If you are trying to lower your carb intake, then serve with low carb crackers or a few crispy low carb cheese crackers.

Ingredients

  • ½ lb ground beef
  • 32 oz beef broth, lower sodium
  • 14.5 oz canned tomatoes, diced
  • 14.5 oz canned green beans
  • 1 cup sliced carrots
  • ¾ cup corn
  • ¾ cup cooked pasta
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoon ketchup
  • 1 teaspoon thyme, crushed
  • ½ teaspoon salt

  • In a medium size soup pot, brown ground beef over medium heat.
  • Add remaining ingredients.  
  • Simmer 30 minutes.  Adjust seasonings as needed.

    This recipe is delicious and quick. My changes: I used a full pound of ground beef along with 1/2 cup diced onion; also beef broth that was not reduced sodium but I added no other salt during the soup preparation. I used Italian green beans, substituted 2 small-chopped medium potatoes for the pasta, and added 1/2 teaspoon garlic powder along with ground pepper to taste.
