So it's 8:30 PM and you're craving pizza but you've kicked carbs all day and you don't want to give in now. Sound familiar? No one following a low carb diet or a diabetes diet wants to load up on carbs at night (or anytime!)  Well, I have the answer for you! Low carb pizza!

This quick to fix pizza uses ingredients you probably already have in your kitchen. Let everyone choose their own toppings and start enjoying pizza night again!

    Cheesy Crispy Low Carb Pizza

I discovered this pizza recipe at Serious Eats a few months ago and it is brilliant. I've tweaked this pizza recipe with my own lower carb technique and variations from simply cheese to pepperoni and olives... you name it! Just try to avoid overloading your pizza with high moisture veggies unless you cook or saute them first. This will help retain the crispy crust we love so very much. Check out some of my other low carb and diabetes friendly pizza recipes.

    Why this recipe works:

    • Uses simple ingredients you probably already have in your kitchen.
    • Use a heavy iron skillet to get the perfect results.
    • Use low carb tortillas to make this pizza diabetes friendly. Choose a size tortilla that will fit in your skillet.
    • Choose your favorite cheese- low fat, mozzarella, etc.
    • Simple toppings help keep the tortilla from getting soggy.

    The main ingredients:

    • Tortillas- choose your favorite low carb tortilla to help keep carb count low. If you are cooking for your family/friends-feel free to use regular tortillas if desired.
    • Pizza sauce- I actually used lower carb marinara since that is what I had on hand. Adjust the amount to suit your preferences.
    • Cheese- I choose asiago cheese for an authentic pizza flavor.
    • Other toppings- pepperoni, olives, herbs just to name a few. Try not to use too many moist veggies so your tortilla will stay crispy.

    Expert Tips:

    1. Use an oven proof skillet- large enough to hold the tortilla you choose.
    2. Allow the tortilla to get evenly browned and crispy in the skillet before flipping.
    3. Use the minimum amount of pizza sauce to help keep tortilla crispy.
    4. Choose turkey pepperoni or turkey sausage if desired to lower fat content.

    Frequently asked questions

Can you eat pizza if you have diabetes?

Pizza can be a part of a diabetes diet if a few things are taken into consideration. Be sure to choose a thin crust to help minimize carb counts. Include more veggies and use low fat cheese as opposed to higher fat meat and extra cheese. Be careful to monitor your portion sizes and try adding a side salad to your meal to help you fill up on veggies.

    Can diabetics eat pizza sauce?

Pizza sauce can vary greatly in carb amounts. When making your pizza at home, try to use a lower carb pizza sauce to help keep carb levels in check. You may even want to try a lower carb alfredo sauce to top your pizza if desired.
