A delicious breakfast skillet with sweet potatoes, peppers, onions and chicken and apple sausage. Cooks in one pan and ready in about 20 minutes!

Chicken and apple sausage breakfast skillet is satisfying comfort food that the whole family will love. This one skillet meal makes a hearty breakfast full of protein, fiber and vitamins. Serve this health recipe for lunch or supper when you want an easy, satisfying meal. Did you know 1 cup of baked sweet potato has more fiber than 1 cup oatmeal? You may use any type of sausage for this recipe, but I love the flavor of the chicken and apple sausage.

Ingredients

2 sweet potatoes, 4 chicken apple sausages, small bowl of olive oil and bowl of chopped peppers and onions
  • Chicken and Apple Sausage- fully cooked and recipe ready. These will be sliced before adding.
  • Sweet potatoes- I used 2 small sweet potatoes and peeled and diced to equal 2 cups total. You may also use pre diced fresh or frozen sweet potatoes. If your sweet potatoes are medium to large size, you may only need 1.
  • Peppers and onions- I used frozen but fresh will work also.
  • Olive oil-approx 2 teaspoons

Instructions

Begin by heating the oil of medium and then add the diced sweet potatoes.

Next add the peppers and onions and seasonings. Stir so the oil coats the veggies then cover and drop the heat to medium low. Allow to cook 12-15 minutes until sweet potatoes are tender.

Add the sliced sausage a few minutes before done. Re-cover and continue cooking.

Hint: For a real time-saving option, use pre cut sweet potatoes and frozen diced peppers and onions!

Substitutions

Want to substitute some ingredients?

  • Chicken and apple sausage- use sliced smoked sausage, sliced turkey sausage or cooked and crumbled sausage patties
  • Sweet potatoes- use diced butternut squash instead
  • Peppers and Onions- Use fresh green onion, onion powder, fresh bell pepper or diced pimentos

Diet modifications:

  • Low sodium- use fresh ground pork instead of sausage and reduce salt to ⅛ teaspoon. Consider adding other seasonings such as garlic powder and/or onion powder.
  • Diabetes friendly as is, be sure to measure servings to estimate carbs.

Variations

Spicy- choose spicy sausage and/or add red pepper flakes as desired.

Deluxe- sprinkle with grated cheese before serving. Place under broiler briefly (use an oven proof skillet) to melt then sprinkle with chopped fresh green onions.

Kid Friendly- Use chopped, cooked link sausage

Ingredients

  • 2 teaspoons olive oil divided
  • 2 small sweet potatoes peeled and cubed
  • 2 cups frozen chopped peppers and onions
  • 6 oz chicken and apple sausage sliced
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper

Instructions

  • Add oil to medium size skillet and heat.
  • Add remaining ingredients to skillet. Stir then cover and drop the heat to medium low. Allow to cook 12-15 minutes until sweet potatoes are tender and sausage reaches 165℉ .
  • Adjust seasoning and serve warm.

Notes

Hint: For a real time-saving option, use pre cut sweet potatoes and frozen diced peppers and onions! Jazz it up with a garnish of chopped green onions or chives.
