Ready for one of the easiest and quickest low carb chicken recipes ever? Here it is! Low carb salsa chicken comes together in a snap and is perfect for weeknights or anytime. Use your favorite low carb salsa, chicken tenders and cheese (optional) to make this recipe the whole family will love!

Ingredients

  • Chicken tenders- I chose tenders because they cook super fast! You may also use chicken breasts.
  • Salsa- Choose your favorite brand -be sure to check labels for carb count. If watching sodium intake, be sure to check the label for that also. Some brands can be very high in sodium!
  • Cheese- optional. If you choose to add cheese, good choices include lower fat cheddar and/ or colby jack.

Instructions

  • Step 1:  Place chicken tenders in an oven safe casserole dish. You may use chicken breasts instead if you wish.

Step 2: Pour salsa over chicken tenders. Place in oven to bake until tenders are fully cooked.

Step 3:  Place cheese over salsa chicken and melt (if desired).

Variations

  • Spicy- choose a hot salsa
  • Deluxe- top with jalapeños, bacon bits or queso.
  • Kid Friendly- go with mild salsa and american cheese
  • Party Plan- heat up regular or low carb tortillas, set up a toppings bar and have "make your own" chicken tacos

Top Tip

For best results, check the temp of the tenders after about 15 minutes of cooking. Avoid overcooking.

Food Safety

  • Cook to a minimum of 165 degrees F.
  • Wash hands after touching raw meat.
  • Don't leave food sitting out for extended periods.
  • Never leave cooking food unattended.

Ingredients

  • 12 oz chicken tenders
  • 1 cup salsa
  • 2 slices cheese

Instructions

  • Preheat oven to 375 ℉. 
  • Place chicken in an ovenproof pan then pour salsa over.
  • Bake for 20 minutes or until chicken temp reaches 165 ℉.  Place cheese slices over salsa chicken then return pan to oven to melt cheese.
