Low carb turkey roll ups for lunch or snack ready in under 5 minutes! Choose low carb tortillas and fillings and top it off with a creamy dressing or spread- perfect anytime. This keto turkey recipe makes a great appetizer too!

How about a super simple diabetes friendly low carb snack or diabetes friendly lunch idea? What could be easier than a low carb turkey roll up? There are lots of options for low carb wraps or go super low carb and use a lettuce leaf!

This can also be a healthy after school snack idea for kids. Just use their favorite meat and cheese along with lettuce and tomato. I love to add garden vegetable cream cheese for a tasty spread. Let the kids make these themselves as they learn how to make a healthy snack!

  • Uses low carb tortillas or wraps to reduce total carbs usually found in regular tortillas.
  • Turkey and cheese are the protein source- other options include chicken, roast beef, etc.
  • Add your veggies in for crunch and fiber.Choose honey mustard or cream cheese to bind it all together for a satisfying meal.

The Main ingredients:

  • Tortilla- Choose your favorite low carb tortilla wrap or lettuce leaf.
  • Sandwich Spread- Honey mustard or cream cheese make a great dressing for this wrap.
  • Roasted turkey- use deli meat (choose lower sodium selections at the deli if desired) or use leftovers from your roasted turkey breast.
  • Cheese- choose your favorite cheese
  • Veggies- choose lots of low carb veggies to finish it off.

How to make turkey roll ups:

  • Step 1- Lay tortilla flat then spread on mustard.
  • Step 2- Add ham.
  • Step 3- Add cheese.
  • Step 4- Add lettuce, tomato.
  • Step 5- Roll up tortilla then slice in half. Secure with toothpicks if needed.

  • Prepare roll up on wax paper to help make rolling easier.
  • Use toothpicks if needed to secure tortilla into place.
  • If slicing into rounds for appetizers, make recipe ahead of time. Place uncut roll up into refrigerator for several hours to help it keep rolled up shape. Slice when ready to serve.
  • Dice tortilla and shred lettuce for nice presentation.

Ingredients

  • 1 low carb tortilla wrap (or lettuce leaf)
  • 1 Tablespoon low carb honey mustard or garden veggie cream cheese
  • 2 oz roasted turkey or other meat
  • 1 slice cheese
  • diced tomatoes
  • lettuce
Prevent your screen from going dark

Instructions

  • Place wrap or lettuce leaf on wax paper or foil sheet and spread with honey mustard.
  • Layer remaining ingredients on wrap and roll up.
  • Cut wrap in half if desired.
  • Note: Carb count will be much lower if using lettuce leaf instead of tortilla.

    I look forward to learning more about your program on Healthier Living. I wish your list of snacks and wonderful meal plans came in a book form, it would be more enjoyable to take the printed info around, instead of being glued to the chair facing the computer screen constantly.I know I could print all the info but that is a pain the backside. Will they ever come out in book form, your ideas, recipes, yummy looking pictures, the pictures keep the interest up besides my appetite. Thank you for your time and expertise . 7/23/2021 1403.
