A 10 minute avocado tomato toast meal idea that’s fresh and delicious! Crunchy sourdough with a kick of honey mustard and covered with sliced tomatoes, avocado and a thick slice of melted cheese.

Avocado and Tomato Grilled Cheese

Here’s an avocado grilled cheese with ingredients that can actually help control type 2 diabetes. High fiber bread has been studied and shown to be beneficial in controlling blood sugar. (Remember each person may have a different response to bread, so choose the one you do best with.)

Avocados are low in carbs and contain monounsaturated fats which are considered to be a heart healthy fat. Tomatoes are low in carbs and high in fiber which also helps moderate blood glucose levels. Oh yeah, and besides the health benefits, this avocado grilled cheese sandwich just tastes amazing!!

Why this recipe works:

  • Uses “substantial” sourdough or wheat bread which holds up to the toppings without getting soggy.
  • Honey mustard dressing coats the bread to add extra flavor.
  • Good combination of carbs, protein and fat for a complete meal.

The main ingredients:

  • Sourdough bread- choose any substantial bread. Other options include french bread, italian bread, whole wheat, etc. Avoid using regular white bread as it may become soggy and not hold up well.
  • Honey Mustard Dressing- use your favorite brand
  • Tomato- use fresh tomatoes, washed and thinly sliced.
  • Avocado- Slice thinly.
  • Cheese- use your favorite.

How to make avocado tomato grilled cheese:

  1. Start by toasting your bread- no butter or oil needed. Use your toaster or oven broiler for this step.
  2. Spread honey mustard on the toast
  3. Add sliced tomato, avocado and cheese.
  4. Place sandwich under broiler to melt cheese.

  • 1 slice wheat bread
  • 1 tbsp. honey mustard
  • 1-2 slices tomato
  • 1/2 avocado sliced
  • 1 slice cheddar cheese

  • Place under broiler just until cheese melts.
