Looking for ways to use up leftover shredded beef? Try this easy steak and cheese bowl! We add pepperoncini to kick up the flavor- you will want to add this one to your recipe rotation ASAP! Serve this recipe with sandwich buns for a family friendly meal.

Just as the type of steak you use is flexible, so is the type of cheese. I think a pepper-jack would be great or even swiss cheese. In other words, don't feel like you need to go buy lots of expensive ingredients for this recipe to work. Use whatever cheese you have in your fridge.

Your low carb diners can pile this mixture over a garden salad or fill lettuce leaves. Others can use hoagie buns or toast. I love recipes that will satisfy the whole gang!

What is pepperoncini?

The pepperoncini sold in most U.S. grocery stores is a mild pickled pepper that may be whole, sliced or chopped. It is used most often as a condiment on sandwiches, salads and in mediterranean recipes.

Why this recipe works:

  • Use any type of steak or roast you prefer (ribeye, sirloin, chuck roast, flat iron, etc.
  • Choose your favorite cheese- most white cheese works well (Monterey jack, provolone, etc).
  • Makes a great lettuce leaf or sandwich filling!
  • Ready in about 30 minutes!

The main ingredients:

  • Steak- choose the same type of steak you might use for fajitas. I used minute steaks but any steak works well.
  • Pepperoncini- you will find these jarred peppers in the condiment area near the pickles and olives. We will be chopping the pepperoncini into smaller pieces.
  • Cheese- I love the flavor of provolone cheese; use your favorite white cheese.
  • Wraps- this recipe works great in a lettuce leaf! If you aren't counting carbs, go for a hoagie bun.

How to make low carb Italian beef and cheese bowl:

  • Step 1: Start by sautéing the garlic, onions and chopped pepperoncini.
  • Step 2: Brown the steak strips.
  • Step 3: Add steak to veggies.
  • Step 4: Top with cheese and serve.

  2. If possible, use a heavy skillet to sauté the steak for best browning results.
  3. For best browning results, avoid crowding the steak in the pan.
  4. Serve with both lettuce leaves and sandwich buns for an easy meal for family/guests.

Ingredients

  • 4 teaspoon olive oil, divided
  • ½ teaspoon minced garlic
  • 4 green onions, chopped
  • ½ cup marinated sliced pepperoncini, chopped
  • 1.5 lb steak use your favorite cut
  • 2 teaspoon worcestershire sauce
  • 4 slices provolone cheese
  • romaine lettuce leaves optional
  • sliced tomatoes optional

Instructions

  • Heat 2 tsp. olive oil in skillet until warm then add garlic, onions, and pepperoncini peppers.  Sauté 4-5 minutes, stirring occasionally, until tender.  Remove from skillet and set aside.
  • Cut steak into strips and add 2 tsp. worcestershire sauce, stir to combine. 
  • Heat remaining olive oil in skillet, then add steak strips in batches. (Avoid crowding steak so pieces will brown easier.) Turn steak to brown each side then remove from skillet.  
  • Add steak and pepperoncini mixture back to skillet and toss to combine. Place 4 slices provolone cheese over all. Cover pan and allow cheese to melt. 
  • Serve with romaine lettuce leaves and sliced tomatoes, etc.
