    This time-saving chicken cordon bleu keto casserole makes the perfect weeknight meal-ready in under 30 minutes. Each serving of this low carb casserole has only 3gm carbs and plenty of flavor to please the whole family!

    Chicken cordon bleu keto casserole is one of those recipes that everyone loves-especially when it has a delicious creamy sauce! Chicken tenders lightly sautéed then covered in layers of ham, cheese and hollandaise sauce makes this a family favorite.

     I find this is my go-to recipe whenever I want quick low carb comfort food. Kids can help in the kitchen by adding the layered ingredients.

    What is Chicken Cordon Bleu?

    Chicken cordon bleu recipes generally consist of a chicken breast layered with ham and Swiss cheese then rolled up. The chicken breast is then rolled in breadcrumbs and baked. This is a fairly time consuming process, but is a delicious entree for special events.

    Why this recipe works:

    Traditional chicken cordon bleu can be rather time consuming but this chicken cordon bleu casserole recipe makes things much easier! Recipe features:

    • The ingredients are layered- a huge time saver
    • Use a hollandaise sauce mix which can be prepared in minutes- this adds incredible flavor
    • This recipe can be prepared in advance up to the point of baking. Perfect for busy weeknights or for a low-stress meal anytime

    Bonus- this recipe is also a low carb recipe with only 3gm carb/serving!

    The ingredients for Chicken Cordon Bleu Casserole

    • The main ingredient for this recipe is chicken tenders. I prefer chicken tenders to chicken breasts as they cook much faster and are generally more tender and juicy. Plan to cook about 3 tenders per person (for bigger appetites, go with 4 or more per person).
    • Hollandaise sauce mix- find this in the sauces and gravy mix section of the grocery. Super quick to make and can be made ahead if desired. If you prefer, you may prepare your hollandaise sauce from scratch. Check out this Hollandaise Sauce from Jessica Gavin.
    • Ham is another key ingredient. I bought a lower sodium sliced deli ham but you may use any brand or type of ham you prefer. We will be dicing the ham, so either whole or sliced will work. (I have also seen pre-diced ham in my grocery store.)
    • Swiss cheese either in block form or pre-shredded is also a must.

    Let's get started with step by step instructions on how to make chicken cordon bleu casserole! So gather your ingredients...

    Ingredients for chicken cordon bleu include chicken tenders, swiss cheese, ham and hollandaise sauce.

    Step by Step Method to make Chicken Cordon Bleu Casserole

    1. Begin by preparing the hollandaise sauce mix according to the package directions (photo 1). My hollandaise sauce required butter and water. If you made your sauce ahead of time, no need to warm it up-it will heat in the oven. Set this aside for now. 
    2. Next , sprinkle the tenders with rotisserie seasoning (photo 2).
    3. Brown the tenders in an oven-proof skillet (photo 3).
    4. Layer the casserole ingredients. Start by spreading the hollandaise sauce evenly over the chicken tenders in the skillet (photo 4). Next, add layer of diced ham (photo 5) then final layer of shredded cheese (photo 6).
    5. Bake until chicken is fully cooked and cheese is melted.

    Expert tips for making Chicken Cordon Bleu Casserole

    1.  Feel free to scale the size of this recipe to meet your needs. Simply bump the ingredient amounts up or down depending on the number of diners or for larger or smaller appetites.
    2. If you don't have chicken tenders, I recommend chicken breasts sliced lengthwise. This will keep the cooking time to a minimum.
    3. Use a thermometer to check the doneness of your recipe. Chicken is fully cooked at 165°F.
    4. Plan to use an oven proof skillet or pan. The recipe starts out on top of the stove then moves to the oven for final cooking.
    5. Cook your tenders in batches to improve browning. Crowding the pan will steam the tenders rather than allowing them to brown which adds flavor and eye appeal.

    2. Can I make this recipe with shredded rotisserie chicken? Yes, rotisserie chicken will work. Cut down on the baking time just long enough to heat the dish thoroughly and melt the cheese.
    3. Can I serve Chicken Cordon Bleu casserole with rice? Rice may be served with this recipe, just remember if you are watching your carbs, be sure to measure your serving. (⅓ cup cooked rice =15gm)
    4. What can I do with leftovers?  Leftovers re-heat perfectly, so go ahead and make a huge recipe. You can take it for lunch the next day or you can serve it over rice or cauliflower rice later.

    Ingredients

    • 1 pkg hollandaise sauce, prepared
    • 1 lb chicken tenders
    • 1 teaspoon rotisserie seasoning
    • 2 teaspoon olive oil
    • 4 oz ham, diced

      So good! I do not have a cast iron that can transfer to the oven but I still browned my chicken tenders (after removing the tendon) in Olive oil, butter, and garlic. Transferred those to glass baking dish and cooked as directed. Turned out amazing. Much tastier and lighter than others I have tried with creamed soup. I served it with minute rice (cooked in chicken broth) and roasted asparagus. This one is a keeper!

      I have tried other cordon Bleu recipes but this one is the best. It is so simple to prepare and everyone likes it. Since my family is not a fan of turkey, they asked that I make this for Thanksgiving. My prep time for thanksgiving just got reduced!!!

      This recipe was fabulous! I made it with left over rotisserie chicken and ham steak diced and it took me like 20 minutes to get dinner ready! Definitely adding to the dinner rotation!
