Fast and simple roast beef roll ups are just right for lunch or snack. This low carb sandwich is made with items you probably have on hand. Ready in just a few minutes, they make a great low carb picnic food.

It is always a struggle to find quick, low carb, tasty lunch ideas, so I am always looking for new ideas. These roast beef roll ups fit the bill for an easy sandwich or snack! You probably have most if not all the ingredients on hand to make them anytime. I usually keep low carb tortillas in the fridge along with honey mustard. Of course, lettuce, tomato and cheese are a must have at all times. The one ingredient you may have to get is roast beef, but you can really use any type of lunch meat for these. Check out my low carb turkey roll ups for another version of this recipe.

🥘 Ingredients

  • Low Carb Flour Tortillas- these are easy to find in most grocery stores. I used the taco size.
  • Sliced deli roast beef- I have also used corned beef with great results. If you prefer, use sliced leftover beef roast.
  • Sliced cheese- the photo shows colby cheese- use your favorite.
  • Lettuce and tomato- slice the tomato thinly to make rolling up the sandwich easier.
  • Honey Mustard - Choose a lower carb version if desired.

🔪 Instructions

Place a tortilla on your work space, then spread with honey mustard.

Next, add a layer of cheese then lettuce and tomato. Sprinkle on any extra seasoning you would like such as pepper, everything bagel, seasoned salt, etc.

Next roll up the tortilla and secure with toothpicks.

Slice the wrap in half and enjoy! Try dipping your wrap in low carb dressing, mustard or sauce for even more flavor.

📖 Variations

Low Sodium-Are you watching your sodium intake? Select lower sodium meats and cheeses available at your deli. Try leftover sliced beef roast for a lower sodium option. Check dressing labels for lower sodium varieties.

Kid Friendly- Use regular tortillas and a mild dressing or mayonnaise.

Spicy- add a bit or horseradish as a spread.

💭 Top tip

🍽 Equipment

Toothpicks are very handy to have when you make this recipe! If you are out of them, secure your wraps in wax paper or foil so the wraps will stay together.

Ingredients

  • 1 each tortilla, low carb taco size
  • 2 teaspoon honey mustard dressing low carb
  • 1 slice roast beef
  • 1 slice colby cheese
  • 1 leaf lettuce
  • 2 slices tomato
Prevent your screen from going dark

Instructions

  • Place tortilla on counter and spread with honey mustard.
  • Layer remaining ingredients on tortilla.
  • Roll tortilla then cut in half. Secure with toothpicks.
  • Serve with dressing or mustard for dipping if desired.
