Ingredients
- Chicken tenders- I chose tenders because they cook super fast! You may also use chicken breasts.
- Salsa- Choose your favorite brand -be sure to check labels for carb count. If watching sodium intake, be sure to check the label for that also. Some brands can be very high in sodium!
- Cheese- optional. If you choose to add cheese, good choices include lower fat cheddar and/ or colby jack.
Instructions
- Step 1: Place chicken tenders in an oven safe casserole dish. You may use chicken breasts instead if you wish.
Step 2: Pour salsa over chicken tenders. Place in oven to bake until tenders are fully cooked.
Step 3: Place cheese over salsa chicken and melt (if desired).
Variations
- Spicy- choose a hot salsa
- Deluxe- top with jalapeños, bacon bits or queso.
- Kid Friendly- go with mild salsa and american cheese
- Party Plan- heat up regular or low carb tortillas, set up a toppings bar and have "make your own" chicken tacos
Top Tip
For best results, check the temp of the tenders after about 15 minutes of cooking. Avoid overcooking.
