    Cheesy Oven Roasted Asparagus

    Tender roasted asparagus gets a flavor boost with melted cheese. Enjoy this recipe as a delicious side dish or lighter entree. Low carb and ready in about 20 minutes.

    I'm always on the lookout for easy recipes with asparagus. This recipe for cheesy roasted asparagus definitely fills the bill. Simply roast your asparagus then add cheese. Easy! I used havarti cheese because it is heavenly when melted but feel free to use whatever cheese you have on hand.

    How to roast asparagus in the oven:

    Coat fresh asparagus with olive oil, garlic, salt and pepper. Then spread out on parchment lined pan. We will be roasting at 400 degrees approx 10 minutes depending on the size of the asparagus.

    Roast asparagus until deep green and tender. Avoid overcooking which will make the asparagus tough and chewy.

    After roasting, lay cheese slices over asparagus then return to oven to melt. I love to use white cheese such as gouda or havarti. Choose your favorite cheese.

    The finished asparagus covered in delicious, melted cheese.  This recipe makes about 4 servings and it is easy to increase the recipe. A new delicious twist on roasted asparagus!

    Tips for success:

    If possible, choose medium to small asparagus stalks for the most tender and flavorful results. Watch closely during roasting as it is very easy to go from perfect to tough in a short time! Also, watch closely when melting the cheese during the final step. It won't take long at all.

    Ingredients

    • 1 lb asparagus, fresh
    • 1 tablespoon olive oil
    • 1 teaspoon garlic, minced
    • ⅕ teaspoon salt
    • 3 slices havarti cheese or your favorite cheese
    Prevent your screen from going dark

    Instructions

    • Preheat oven to 400 degrees.
    • Line a pan with parchment paper.  Clean and trim asparagus then place on prepared pan.
    • Add olive oil, garlic and salt to asparagus and toss to coat.   Place in oven to roast about 10 minutes.
    • Remove asparagus then place cheese on top.  Place under broiler just until cheese melts.  Serve.
