    Mediterranean Roast Vegetables

    The Mediterranean diet is one of flavorful and bold seasonings that can really help you reduce the amount of sodium in your diet and bring out the flavors of the food. Roasting vegetables with olive oil, garlic and herbs will make your home smell amazing! You can use many of these roasted veggies in other recipes to add a flavor blast. Pro tip: Be sure to check the date on your herbs to make sure they are fresh.

    What ingredients will I need to make roast veggies?

    • Olive oil
    • Herbs- my favorites are thyme, oregano and tarragon
    • Garlic- I use minced garlic in a jar for convenience but purists will insist on fresh garlic cloves.
