A delicious and diabetes friendly sweet potato breakfast potato filled with ham, eggs and cheese. Each serving has about 21gm carb and can be prepared the night before. Simply heat and enjoy!

Sweet potatoes for breakfast!! Yes, now you can enjoy them all day long with this one-dish meal. This sweet potato tots recipe is a tweak of my Sweet Potato Breakfast Casserole Cups and is a super easy, nutritious meal the whole family will love!

The main ingredients

  • Sweet potato tots- find these in the freezer section of your grocery
  • Ham- I use pre-diced ham for convenience. Feel free to dice or chop your own if desired.
  • Eggs- large or extra-large
  • Half and half- may use whole milk or heavy cream as desired
  • Cheese- choose your favorite. Sharp cheddar works well.

How to instructions

  • Step 1-Place sweet potato tots in an oven proof baking dish.
  • Step 2- Sprinkle diced ham over sweet potato tots.
  • Step 3-Pour eggs, cream and seasonings over.
  • Step 4- Sprinkle cheese over then bake.

Expert tips

  • No need to thaw the sweet potato tots, they will fully cook in the oven.

  • Baking time will vary based on pan size-bake until the eggs are set.

Sweet Potato Tot Breakfast Casserole

You will love the hint of sweetness in this healthy sweet potato tots recipe. Ham, cheese and eggs make a casserole the whole family will love.

Ingredients

  • 3 cups frozen sweet potato tots
  • 1 cup 4 oz. diced ham
  • 6 eggs
  • 2 Tablespoons half & half
  • ⅛ tsp. pepper
  • Pinch salt
  • ½ cup grated cheddar cheese optional
Prevent your screen from going dark

Instructions

  • Preheat oven to 375 degrees F.
  • Liberally grease a medium-size baking pan.
  • Spread frozen tots into baking pan and top with diced ham.
  • Combine remaining ingredients (except cheese) and beat slightly to combine.
  • Pour eggs over ham and sweet potatoes.
  • Top with cheese, if desired.
  • Bake 50 minutes or until eggs are set.

Notes
