Delicious philly cheesesteak as a grab and go snack! Perfect for lunch or snack and ready in under 30 minutes. Each of these low carb philly cheesesteak bites is about 100 calories and 2gm carbs.

You will love the authentic philly cheesesteak flavor and easy of preparation using a muffin tin. These savory muffins remind me of my Chicken Muffins because they are so easy and so good!

Ingredients

  • Roast beef or steak- use up your leftovers or use lower sodium roast beef lunch meat
  • Eggs
  • Cream or half and half
  • Veggies- onion and green peppers-these may be fresh or frozen
  • Cheese- use provolone for authentic cheesesteak flavor

Instructions

  • Step1: Start by whisking the eggs
  • Step 2: Add all the ingredients together
  • Step 3: Stir well
  • Step 4: Fill the lined muffin tins and bake

Ingredients

  • 4 large eggs
  • ¼ cup half & half cream or 2% milk
  • ⅓ cup frozen diced onion
  • ⅓ cup frozen diced green pepper
  • ½ cup (or 3-4 slices) chopped or grated provolone cheese
  • 1 cup (5oz.) chopped leftover steak or roast beef
Prevent your screen from going dark

Instructions

  • Preheat oven to 350 degrees F.
  • Coat a muffin tin with non-stick spray or use muffin liners (you will use 9 of the muffin cups).
  • In a large measuring cup, combine eggs and cream. Whip with a fork to combine well.
  • Add remaining ingredients and stir to combine.
  • Pour mixture into muffin cups, filling each about ¾ full.
  • Place in oven and bake approx 20 minutes or until set.
  • Turn oven to broil and brown slightly. (Watch carefully to prevent overcooking.)
